Tropical Chicken I

"This recipe can be made sugar-free. Use 1/2 cup granulated fructose instead of the sugar. It's a low-fat recipe! (Recipe Variation: Before the chicken breasts, spread 4 to 6 cups of cooked rice in the baking dish. Place the chicken on top of the rice and bake all together with pineapple mixture)."

Ingredients

  • 10 skinless, boneless chicken breasts
  • 1 (8 ounce) can crushed pineapple with juice
  • 1/2 cup white sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon mustard powder

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine the pineapple (with juice/ liquids), sugar, lemon juice and dry mustard in a small bowl. Mix all together. Place chicken breasts in a lightly greased 9x13 inch baking dish. Spread the pineapple mixture over the chicken. Bake in the preheated oven for 50 to 60 minutes.
