4 cups uncooked egg noodles
1 pound ground beef
1 (15 ounce) can mandarin oranges
1 (8 ounce) can unsweetened pineapple chunks
2 tablespoons cornstarch
1 tablespoon lemon juice
1 tablespoon soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/3 cup salted whole cashews
1/3 cup flaked coconut, toasted

DIRECTIONS
Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain.
Drain the mandarin oranges and pineapple, reserving juices. Set fruit aside. In a bowl, whisk the cornstarch and reserved juices until smooth; stir in the lemon juice, soy sauce, garlic powder, salt and nutmeg. Pour over beef.
Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the cashews, oranges and pineapple. Cook for 2 minutes or until heated through. Drain noodles; top with beef mixture. Sprinkle with coconut.

Nutritional Analysis: 1 cup beef mixture with 1 cup noodles equals 528 calories, 21 g fat (9 g saturated fat), 92 mg cholesterol, 569 mg sodium, 54 g carbohydrate, 3 g fiber, 29 g protein.

5 stars due to the EASE of preparation and utilization of common ingredients. I realized too late I did not have egg noodles so I used basmati rice and loved that. Also added red pepper for a little heat and I skipped the coconut. My husband went back for seconds. I will make again!

I almost didn't make this because it sounded kind of weird. I'm glad I went ahead anyways - it was good! My only modification was that I added some crushed red & cayenne pepper because I like that sweet/hot mix. It may not be everyone's cup of tea, but I'm sure I will make it again.

I had all these ingredients on hand, and it was quick to make. We found it interesting and good! We're not coconut fans so left that out.

WOW! I had a can of pineapple and some ground beef and used the "ingredient search" and found this recipe. After getting over my initial skepticism, I tried this and -- WOW! Mixing the familiar beef and noodle taste with the tangy sweetness of pineapple and mandarin orange is a delight. The spices in the sauce made the beef sweet and summery in a delightful way! The nuts added texture, and the coconut was the crowning glory. I am SO glad I tried this, my boyfriend and I were ecstatic. Thank you!!
