Triple-Grain Pilaf
SUBMITTED BY:
Taste of Home Test Kitchen
"Looking for a side dish with a pleasant nutty flavor? Our Test Kitchen came up with this easy pilaf recipe that's a perfect mild accompaniment to poultry, beef or fish. The combination of rice, bulgur and barley gives it a nice blend of textures."

This is a really nice change from rice and easily adaptable to what you have on hand or what you're serving it with. I used chopped yellow onions instead of green and chicken broth instead of beef. A shot of garlic would not be amiss....

This was pretty tasty, but I do think next time I make this I will add some seasonings to the cooking water. I was unable to find quick cooking barley so I cooked the barley alone in the stock for ~25 minutes and then added in the bulgur and the rice. I used basmati. I did need a little more stock at the end. This makes a huge batch!
