It's gooey sweet and unadorned by a top crust. What better invitation to come join the party does a hungry insect need? It should be called "molasses pie," but it's whimsically named shoofly because its "open" structure lures flies that must be shooed away. Shoofly Pie is thought to be a Pennsylvania Dutch creation, and may be a direct descendant of "Centennial Cake" introduced at the first World's Fair -- the 1876 Philadelphia Centennial Exposition.

The niu (coconut) really adds to this easy, modern, Hawaiian desert. This is frequently served in lieu of pecan pie during the holidays. It can be served warm with vanilla ice cream or cold with whipping cream, and can be made a day in advance of your Hawaiian feast!

This is a marvelous apple tart that can be made in a pie plate or tart pan if you have one. A frangipane filling really brings together the flavors of fall, and the apples create a beautiful design.

These two-layered buttery squares are really good. The first layer is like a flaky cookie made with butter, flour and confectioners ' sugar. The second layer, baked onto the first, is sugary and filled with raisins. This recipe yields twelve squares.
