My mom and I invented this recipe with EASE in mind, it's a one dish complete meal. Best of all, even my veggie hating children LOVE it! It can be made with sweet peas, or with spinach.... both are delish. 

Country Chicken Casserole

Chicken breast, hash browns, fried onions and cheese. Now that's country cookin' for ya! This is a wonderful easy recipe, especially if want a filling meal, but don't have time to stay in the kitchen. This is my mother-in-law's favorite dish, and it heats up well for leftovers. 

Chicken Sandwich Casserole

Your basic chicken salad sandwiched between layers of toast, then smothered with a mayonnaise cream sauce and topped with golden Cheddar. This needs to refrigerate for several hours prior to baking, so do plan ahead.

Creamy chicken, veggies and pasta star in this one-dish meal that you can make ahead up to 24 hours in advance. Or freeze it uncooked until you need it. In place of the canned green beans, you can substitute 16 ounces of mixed veggies, frozen or thawed. If frozen, you'll need to extend the cooking time by about 15 minutes.
