INGREDIENTS
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 cup sliced fresh strawberries
1/2 cup sliced fresh rhubarb
TOPPING:
6 small strawberries, halved
2 teaspoons sugar

DIRECTIONS
In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, beat egg, milk and oil until smooth. Stir into dry ingredients just until moistened. Fold in strawberries and rhubarb. Fill greased or paper-lined muffin cups three-fourths full. Place a strawberry half, cut side down, on each. Sprinkle with sugar. Bake at 375 degrees F for 22-25 minutes or until muffins test done. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Strawberries are a very wet fruit and in a light muffin like this one, they made wet globby spots with a texture similar to unkcooked batter. I had several people sample these and all agreed that the flavor was ok, but the texture was not good. If I make these again, I will use only rhubarb (chopped small to avoid huge globs) and serve them with strawberry jam.

This is the best muffin recipe not a really sweet muffin. I have got nothing but raves with this muffin. I have made 4 batches. I have the cupcake and muffin book for Taste of Home and they are really good recipes. Money well spent for the book..
