Ingredients

  • 2 (14.5 ounce) cans COLLEGE INN® Chicken Broth
  • 1 (14.5 ounce) can DEL MONTE® Stewed Tomatoes, Mexican Recipe, coarsely chopped
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1/4 teaspoon ground cumin
  • 2 cups cooked chicken or turkey, diced
  • 1 1/2 cups crushed baked tortilla chips
  • Cilantro
  • 1/4 cup Shredded Monterey Jack cheese

Directions

  1. Combine tomatoes with juice, broth, onion, garlic and cumin in large pot; simmer 10 minutes. Add chicken or turkey; simmer 3 to 5 minutes. Top individual servings with tortilla chips, cilantro and cheese.
