Tortellini a la Carbonara

"A rich, creamy sauce with bacon and tortellini pasta. Tortellini means 'little twists' in Italian and is rumored to have been shaped after Venus's navel."

INGREDIENTS

  • 3 cups spinach tortellini
  • 3 egg yolks
  • 4 cups heavy whipping cream
  • 1 cup grated Parmesan cheese
  • 1 pound bacon

DIRECTIONS

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, or until al dente; drain. Meanwhile, in a medium bowl, mix egg yolks, cream and cheese.
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. Add tortellini and bacon to carbonara sauce; cook sauce over medium heat for 5 minutes, stirring constantly.

Has anyone else looked at the nutrional facts on this recipe? I'm sure it is good, however, it's a heart attack on a plate.

Marina, life doesn't get any better than this. To cut down on the fat, I used evaporated skim milk. Believe me, when I've spent a week making low fat dinners, I'll definitely do the heavy cream route, but for now, this was great! For you guys who haven't used the new "brand name" boxed tortellini yet, please try it. I think it's better than frozen. Delicious and thanks!
