This recipe always turns out fantastic. My only tip would be to make it a day before. Letting the flavors blend overnight in the fridge makes it much more flavorful. (We also omit the green peppers because we don't care for the taste.)

I followed her directions exactly. The base recipe is only okay at best. The flavor is super sweet and bland. Under no circumstance is this Minestrone, but with some doctoring, it makes a pretty decent soup. Unless you want an overly sweet soup, I wouldn't advise adding that much ketchup. I was shocked she wanted ketchup to begin with, and after tasting, I'm not a believer. Also you might want to cut down on the veggies, and add some red beans. I'll stick to my gut next time and make a legit minestrone, and add tortellini.

Authentic Minestrone would have beans in it, but I was happy to find this soup without them. It satisfied my daughter who is not a fan of beans. I used the "fresh" (from the fridge) tortellini which was definitely better than the dry, and worth the extra cost.

This was a really great, filling soup! I did use vegetable broth and eliminated the sausage to make it more vegetarian friendly. I also substituted a small can of tomato sauce for ketchup. For everything else I followed the recipe completely and everyone was so happy with it! Thanks!

The best Minetrone I've ever had! I'm not a big sausage fan so I sauted the onion and garlic in a little olive oil first then followed recipe, adding a can of great northern beans with the zuchini and peppers. I was skeptical about the ketchup but tried it; the soup is wonderful, will certainly make again - thank you

OK, so this was sooo good. The only thing I am going to do different is use baked potatos. They are my favorite. The flavor of this dish was everything I wanted.

This was ok but when I was at the store I forgot to buy the tortellini so I had to use macaroni pasta the I had on hand. My family didnt really care for it. They arent big minestrone eaters however, when they are at a restaurant and try some minestrones they rave over it. So, I need to find that great recipe that my family can rave over.

This was EXCELLENT! I made the following changes: I used 1/2 italian sausage and 1/2 spicy italian sausage, 3 garlic cloves, Cento whole canned tomatoes (which I chopped before I added them), and cheese tortellini from Pasta & Co. here in Seattle. Fresh tortellini made a huge difference if you can find it. If not, I'd sub. frozen cheese tort. from the grocery store before I'd use the Bertolli brand in the cheese section. Yum!
