This was an excellent soup and easy to make. I changed a couple of things and it still worked out very nicely!! I used italian sausage in bulk instead of turkey sausage. I also dont like chunks of tomato so instead of diced tomatoes I used tomato juice and substituted tomato sauce for the ketchup. Other than those three things I followed the recipe and it is EXCELLENT!! My boyfriend and I will be eating on it all week long!!! thanks for sharing this.

delicious! definitely better the next day when the flavors all get to know each other better. i added a handful of frozen cut green beans and a can of garbanzo's too just to up the veggie/fiber amount. husband and 3 year old gobbled it up! thank you for sharing.

Excellent! I made it vegetarian by leaving the sausage out and using veggie broth. I couldn't bring myself to use ketchup so used a small can of tomato sauce as others mentioned. I added kidney beans too. Love the tortellini! Everyone loved it and it made lots for leftovers too! Will definitely make again.

Try this and be surprised how much you like it! I too doubted the idea of ketchup in soup so only used 1/4 cup of it and made up the rest by using a small can of tomato paste. I cooked up 5 spicy Italian sausages and aside from the onion, carrots and celery I used a package of 'Europe's Best' Mediterranean Diced Delite that included zucchini, eggplant, red/yellow/green onions, mushrooms and tomato. I used up some frozen tortellini that I had on hand. To make it a true Minestrone I tossed in a few handfuls of red and white beans. I even froze some for later.

This was a good soup and even my husband said, "This is really delicious! Better than expected!" which made me very pleased. I used veggie broth instead of beef and veggie crumbles instead of the sausage. I also used frozen gnocchi instead of tortellini so it was 100% vegetarian. It is a very nice soup full of many delicious things! You wont' have an empty bite!

Easily one of the best soups I've ever made. I added tomato paste and fresh tomatoes instead of canned and ketchup but didn't change anything else. Served with bread sticks and it was super awesome!

I didn't have zucchini, so I doubled the tortellini. Otherwise, followed recipe. Absolutely fabulously yummy! Hint: Be sure to search out the frozen tortellini. It is half the price of the fresh and just as good.

This soup received rave reviews from nearly everyone at my dinner party. I used a combination of sweet and hot italian sausage. The sausage flavoring permeates the whole dish. Even using lower sodium beef broth, we didn't miss anything taste-wise with all of those great flavors. I made most of the soup well ahead of the party and added the zucchini and tortellini at the last minute. Everything was perfectly cooked.

I tried this recipe because of all of the positive reviews and was very happily surprised. I was very skeptical about the combination of zucchini and ketchup (!) but somehow, this all comes together with wonderful flavour. This is a great winter soup that I will certainly make again.

Good and hearty. I made it vegetarian and added northern beans instead of the meat. Also left out the green pepper and added tomato sauce instead of ketchup.

This recipe was great. I did add more veggies to it though, we love veggies here. I also did not have turkey sausage so I just used regular hot sausage. I even made enough to freeze some.

Made this today and we really liked it. I too sustituted tomato sauce for the ketchup, eliminated the bell peppers and used spicy turkey italian sausagealso reduced the beef broth to 4c and made up the other 2 1/2 w/ water. Served w/ a crusty loaf of french bread this made a perfect cold Sunday afternoon meal. definately a "keeper"!

I made this as the recipe suggested...I did omit the green pepper. I also added an extra 2 cups of the broth, as there were lots of veggies. It smelled just delicious as it simmer and the family loved it! My husband thought it was the best soup he had ever had! Can't beat that!

This was incredible. I took the advice of other cooks and made a few revisions: I omitted the ketchup (it seemed strange to add ketchup to soup) and zucchini because my husband doesn't like it. I added red kidney beans an extra clove of garlic, and some salt and pepper. Also, I didn't have beef broth, so I used the bouillon cubes with the recommended amount of water. I will definitely be making this again.

Delicious!! I made this soup twice...once with nilgai Italian sausage, and once with sweet Italian sausage. I opted to use tomato sauce instead of the ketchup, basil instead of the mixed Italian seasoning, and beef soup base granuals (1 t per c water) instead of the beef broth. I also doubled the cheese tortellini (the kids like a lot of pasta) and it was just fabulous both times. I've been asked for the recipe twice already. Very tasty!!
