INGREDIENTS
1 1/4 pounds Italian turkey sausage links, casings removed
1 large onion, chopped
2 garlic cloves, minced
6 1/2 cups reduced-sodium beef broth
1 (14.5 ounce) can diced tomatoes, undrained
2 cups thinly sliced carrots
1 cup thinly sliced celery
1 cup ketchup
1 teaspoon Italian seasoning
2 cups sliced zucchini
1 medium green pepper, chopped
2 cups frozen cheese tortellini
1/4 cup minced fresh parsley
2 tablespoons grated Parmesan cheese

DIRECTIONS
In a Dutch oven or large saucepan, cook the sausage, onion and garlic over medium heat until meat is no longer pink; drain. Add the broth, tomatoes, carrots, celery, ketchup and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until vegetables are tender.
Add the zucchini and green pepper; cook 5-7 minutes longer or until green pepper is tender. Stir in tortellini and parsley. Bring to a boil. Reduce heat to medium; cook, uncovered, for 5 minutes or until tortellini is tender. Sprinkle with Parmesan cheese just before serving.

This was EXCELLENT! I made the following changes: I used 1/2 italian sausage and 1/2 spicy italian sausage, 3 garlic cloves, Cento whole canned tomatoes (which I chopped before I added them), and cheese tortellini from Pasta & Co. here in Seattle. Fresh tortellini made a huge difference if you can find it. If not, I'd sub. frozen cheese tort. from the grocery store before I'd use the Bertolli brand in the cheese section. Yum!

This minestrone is my most requested meal when the weather turns chilly. I add 1/2 cup dry red wine. You've got to try this recipe!

This was the best!!! My family loved it. I used dry tortellini, added 1 small can of tomato sauce instead of the ketchup. Also added a few sliced fresh mushrooms for the last 15 min. of cooking. Will make again and share this recipe with anyone that enjoys a hearty Italian soup.

My kids call this 'bellybutton soup' because of the tortellinis... it's really a great soup! Very flavorful. I used mild italian sausage, 1/2 can of tomato soup instead of ketchup, and made my own mixture of italian seasoning (oregano, basil, salt, pepper), and one addtl 14oz can of beef broth - The only ingredient I ommitted was the green pepper. The zucchini adds a nice flavor and texture. Will def. make again!

This soup was fantastic!! I used bulk sweet Italian sausage, so there were no casings to remove. I didn't drain it, because there wasn't much. But I would suggest that you drain every bit of grease, as it all shows up in the broth later. Didn't effect the taste, though, and I think I was the only one who noticed. Also, if you use turkey sausage, there may not be any grease.

Left out the ketchup and instead added one more can of diced tomatoes. Came together very quickly and was equally satisfying.

This was a really great, filling soup! I did use vegetable broth and eliminated the sausage to make it more vegetarian friendly. I also substituted a small can of tomato sauce for ketchup. For everything else I followed the recipe completely and everyone was so happy with it! Thanks!

The best Minetrone I've ever had! I'm not a big sausage fan so I sauted the onion and garlic in a little olive oil first then followed recipe, adding a can of great northern beans with the zuchini and peppers. I was skeptical about the ketchup but tried it; the soup is wonderful, will certainly make again - thank you
