Although not a true carbonara, this was excellent! So fast and easy! I browned chopped bacon in a large saucepan, removed and drained it, then prepared the sauce in the same pan. My only addition to the recipe was about a tablespoon of minced garlic from a jar. The sauce was finished first so I kept it on low and added a few drizzles of half-and-half two or three times to keep it a nice consistency. We enjoyed a nice pinot grigio with this delicious meal. This is good enough for company!

Loved it! We simply prefer fresh basil vs. parsley and they did not have cheese tort. so I used chicken. I added garlic too. My hubby loved it! Will definitely this recipe again!

Oh yum! I am stuffed and happy!! I did modify recipe by adding two small grilled chicken breasts, diced, and 1/2 C. of peas. I think that is why I ran short on sauce. I ended up adding another whole cup of whipping cream and another 1/2 C of parmesan. Hate to think of the fat calories contained, but it was SOOO worth it! Also, to add a bit more flavor, I carmelized about 2 Tbsp minced onion and 1 tsp. minced garlic in small amount of bacon grease, then added that to the cheese sauce with a sprinkle of black pepper. I only gave it 4 stars because I think without my additions it wouldn't have been quite so tasty.

Delicious dinner - I made as written only using spinach-cheese tortellini. This was great the first night, but the leftover were as good, if not better then the first time around. This entree is kind of heavy so I served it with a simple green salad.

We really liked this. Very quick and easy to make, yet tastes wonderful! The fresh parsley really gives it a good flavor along with the bacon and freshly grated parmesan cheese. We'll be making this again and again as I almost always have these ingredients on hand; especially in the summer when I'll have my own fresh parsley.

Delicious! Made exactly as written, except using a 16oz. bag of frozen cheese tortellini instead of the 9 oz. refrigerated, and still had plenty of sauce. This was a wonderful, easy side dish and one that I will be making again! Thanks for sharing. :)

Good base recipe. Very heavy meal. Easy to prepare and taste is great when extra ingredients added. I added sautéed onions and garlic to start and cheddar cheese to sauce (b/c I ran out of parm). Subbed evaporated skim milk for cream to reduce calories and thickened with flour.

My family loved this, I added onions and green peppers while the bacon was cooking sauteing together. I also added rosemary with the parsley!

I thought the sauce was really yummy, and I also added some broccoli crowns cut up and some fresh spinach right at the end since it cooks so quickly and that was really good with this recipe. I think you could really do a lot with this as a base.
