My taste buds are still thanking me for making this dish last night. (In fact, I ate leftovers for breakfast!) Yum. Yum. Yum. I doubled the garlic, doubled the zucchini, and used a little more cheese than called for (I used jack cheese). And, I used a mandolin to slice the roma tomatoes and the zucchini, so it went together pretty quickly. A good amount of liquid accumulated on the bottom of the casserole dish during baking, but I lifted the core casserole out of the liquid and placed it on a serving dish. It was gorgeous. It was delicious. It was appreciated. Thanks for the receipe!
