Tomato-Topped Sole

"This dish is so simple to prepare, you won't believe it. My family adores it. You can substitute flounder if you wish, but we prefer the delicate taste of sole."

INGREDIENTS

  • 1 small onion, thinly sliced
  • 1 tablespoon olive or vegetable oil
  • 1 (6 ounce) fillet sole or catfish
  • 1/8 teaspoon salt
  • Dash pepper
  • 1 plum tomato, sliced
  • 2 tablespoons butter or margarine, melted
  • 1/8 teaspoon garlic salt
  • 2 tablespoons minced fresh parsley

DIRECTIONS

  1. In a small skillet, saute onion in oil until tender. Transfer to a greased 1-qt. baking dish. Place fillet over onions. Sprinkle with salt and pepper. Top with tomato slices. Combine butter and garlic powder; pour over tomato. Sprinkle with parsley.
  2. Bake, uncovered, at 350 degrees F for 14-18 minutes or until fish flakes easily with a fork.

This is a very good recipe. I used garlic cloves instead of the powder and diced canned tomatoes as I didn't have fresh tomatoes. My family really liked it including my 2 years old twins.

I made this last night and it was amazing! It was so quick and tasted delicious. I did use minced fresh garlic instead of the powder and mixed that with the melted butter. I will definitely be making this again.

This was great! The whole family enjoyed it, including my very picky two-year-old. I used flounder instead of sole and used fresh garlic instead of powder. It was mild, so the flavors of the fresh fish, tomato, and garlic really came through.
