Ingredients

  • 1 sourdough or baguette French bread, cut into 1-inch slices
  • 1 (14.5 ounce) can RED GOLD® PETITE DICED TOMATOES or REDPACK® PETITE DICED TOMATOES, drained
  • 2 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons fresh chopped basil
  • Salt and ground black pepper to taste

Directions

  1. Brush bread slices with olive oil and broil on each side until toasted. In a small bowl combine the remaining ingredients.
  2. Spoon tomato mixture onto the toasted bread and place under the broiler for 1 to 2 minutes to melt the cheese. Serve warm.

Footnotes

  • Tip:
  • When you have extra fresh basil, mince it in the food processor with some olive oil and some garlic if you like and freeze it in an ice cube tray. Store the cubes in a container in your freezer and you will always have some fresh basil to add to soups and sauces.
