Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • TOPPING:
  • 2 eggs
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups flaked coconut
  • 1 cup chopped walnuts

Directions

  1. In a bowl, combine flour, brown sugar and salt. Cut in shortening until the mixture resembles coarse crumbs. Press into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 325 degrees F for 12-15 minutes or until golden brown.
  2. In a mixing bowl, beat eggs, brown sugar and vanilla until foamy. Combine flour, baking powder and salt; gradually add to the egg mixture. Stir in coconut and nuts. Spread over crust. Bake for 20 minutes or until golden brown. Cool on a wire rack. Cut into bars.

very tasty, hard to describe. I added pecans instead of walnuts, the kids loved it. MORE
