Ingredients

  • 1/2 cup butter or margarine, softened
  • 1/2 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1/4 cup whipping cream
  • FILLING:
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup flaked coconut
  • 1 cup chopped nuts

Directions

  1. In a mixing bowl, cream the butter and brown sugar. Stir in flour. Add cream, 1 tablespoon at a time, until a soft dough forms. Press into an ungreased 9-in. square baking pan. Bake at 350 degrees F for 15 minutes.
  2. Meanwhile, in a mixing bowl, combine brown sugar, eggs and vanilla; mix well. Add flour, baking powder and salt. Stir in the coconut and nuts. Spread over crust. Bake for 25-20 minutes or until a toothpick inserted near the center comes out clean. Cool before cutting.
