1 tablespoon cream cheese, softened
2 angel food cake
1 teaspoon raspberry preserves
2 teaspoons butter or margarine, softened
confectioners' sugar

DIRECTIONS
Spread cream cheese on one slice of cake; spread preserves on second slice. Place slices together, sandwich-style. Spread butter on outsides of cake. In a skillet over medium heat, toast cake on both sides until lightly browned and cream cheese is melted. Dust with confectioners' sugar. Serve immediately.

This was a quick and light dessert that tasted elegant. I omitted the powdered sugar and opted for fresh berries with a sprig of mint. Very versatile when you change the raspberry preserves to blueberry or strawberry or whatever your heart desires.

I would have never thought of trying something like this but I had an angel food cake sitting around and I wanted a different way to serve it. I was pleasantly surprised!
