This was delicious and very easy to make! I made it without olives, and the only thing I may change in the future is using black beans in place of kidney beans.

This was a quick easy recipe that took little effort. I made some alterations based upon other reviewer's suggestions. I browned the meat with onions, added jalapenos, replaced the kidney beans with black beans and the mild sauces for hot sauces. I also added shredded cheese to the top.

What a great idea and easy to make. I also sub black beans, and I use extra olives. Instead of tomato sauce, I used enchilada sauce. I've made it twice, once was a huge batch to bring camping and everyone loved it!

I made this casserole over the weekend and froze individual portions for a quick week-night dinner. It is a very good basic casserole the whole family loved! I added more salsa to mine and 1 small can of green chile's. Serve with a salad, and you're good to go!

With a few changes, this came out GREAT! I call it a mexican lasagna. Browned the meat with chopped onion and garlic powder and then added HOT taco sauce and taco seasoning and medium salsa to the meat while it cooked. Added remaining ingedients (except olives ... don't like them and black beans not kidney beans) to the meat and then spread over noodles. Topped it off with mexican blend cheese and it came out of the oven crispy on top and gooey in the middle. YUM! And, like lasagna, it was just as good cold! Boyfriend had two servings!

I loved this recipe!!! I will use it again for sure! I used black beans instead of kidney beans. My daughter didn't care for it much until I add a sprinkle of cheese and put it into a tortilla and she ate it like a burrito. She then ate two burritos!

I wasn't impressed with this recipe at all, but it mybe it didn't turn outgood for me because I used chicken instead of beef. I just didn't think it had much flavor.

My family & friends raved over this recipe. My grown son who is a professional cook even likes it. I brown the ground beef with chopped onions & garlic powder (not very Mexican) before adding to the other ingredients. I use jalapeno flavored sliced black olives for an extra kick.

Yummy!! Made a few adjustments - used ground turkey, onion, frozen corn, 14 oz can of tomatoes instead of taco & tomato sauce, added more olives, and hot taco seasoning. Topped it with a Mexican blend shredded cheese. My husband and family can't get enough. Thank you!!

This is good. I sauteed some onions, used black beans instead of kidney, added a 4 oz can of chopped chiles, a can of rotel tomatoes with chiles instead of the taco sauce and tomato sauce and 1 14 oz can of diced tomatoes. Also topped with some crushed tortilla chips and shredded mexican blend cheese. This will feed a bunch!

Great recipe for a potluck or when you are trying to feed a crowd. I used ground turkey and topped the casserole with some reserved olive slices, a few slightly crushed taco chips, dobs of sour cream, shredded cheddar/monteray jack cheese and chopped green onions. It looked like a loaded taco without the shell. Made most of it ahead of time and just garnished it and popped it under the broiler to crisp up the chips and melt the cheese on top just before serving, it was a hit, thanks Sara for sharing.

Pretty easy to make once beef and noodles are cooked. I made as is, other than leaving out the olives. It just seemed missing something. The concept was pretty good but something seemed bland about it, though it pretty decent, and different.
