I brought this to a Mother's Day picnic today and one of my family members said "that is the best salad I've ever had". Needless to say, I will be making this again. Since it was Mother's Day, I made some homemade croutons and put them next to the salad ... This salad needed NOTHING extra at all, but who can resist croutons?

This is a real find... Not the salad as such, but the easy and obvious - why didn't I think of that? - idea of making and adding the nuts. I used up some slightly stale cashews which I was about to bin. Easy and delicious. I made the salad - mine had chopped, fresh mango, finely sliced salami (which balanced the sweetness of the nuts beautifully) and crumbled goat's cheese, as well as the usual suspects you find in a salad. Dressing on at the last minute and caramelised nuts sprinkled over. I'll be doing this again and again. And tomorrow I'm making more of those wonderful nuts but with a few variations such as coarse salt or chili flakes of anything else that comes out of my store cupboard. The possiblities are endless! Thank you for such an inspired idea.

We weren't too impressed. It needed something else. The dressing was a little bland, but we're new to making non creamy dressings. However, we LOVED the candied almonds...I think that they made the salad, plus it's something that I've never even thought of doing but will do more often.

I'm almost nervous to rate this recipe since I made it with items I had on hand,and not the original ingredients. I used red leaf lettuce,no onions,celery,mandarins,and I had whole plain almonds that I chopped up. For the dressing I did garlic infused evoo(homemade),Chardonnay dijon mustard,and fresh lemon juice. I was not going to go spend extra $ on the ingredient list if I had similar items at home. This salad was very good,and basically made as recipe. Thank you :)

This salad is so-o-o good and very easy to put together. The nuts add a wonderful crunch to it. Didn't change a thing except that I did make the dressing ahead of time and chilled it for a couple of hours.

I absolutely love this salad. Please note that if you stir those almonds too aggressively and flick one on your stove, LEAVE IT ALONE!! I picked mine up to put back in the pan and had giant blistered burns on my thumb and forefinger. Maybe that's obvious, but heck, you can learn from my mistakes!
