INGREDIENTS
1/2 cup sliced almonds
3 tablespoons sugar
6 cups torn romaine
1 (11 ounce) can mandarin oranges, drained
1 cup sliced celery
3 green onions, sliced
DRESSING:
1/2 cup vegetable oil
1/4 cup vinegar
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon garlic powder

DIRECTIONS
In a small saucepan over medium heat, cook and stir almonds and sugar until almonds are coated and lightly browned, about 4 minutes. Spread the almonds on heavy-duty foil to cool; gently bread apart.
In a large salad bowl, combine romaine, oranges, celery and onions. Top with almonds. In a jar with tight-fitting lid, combine the dressing ingredients; shake well. Pour over the salad and toss gently.

I used this recipe for the dressing and it was TO-DIE-FOR GOOD!!!!!!!!!!! The salad I put it on was romaine lettuce, red onion, tomatoes, goat cheese and sugar glazed walnuts (recipe from this site). YUM!!!!!!!!! I can't wait to make it again! RAVE reviews from everyone (took it to friends for dinner)- even the non salad people. This coule be a meal in itself. Thank you for such a great dressing!!!!!!! This will be 'our' dressing now! I can't imagine anything else being so good.

I'm not typically a big "salad eater". I make them with dinner for other people and just pick at mine. Even I ate every bite of this! The only change I made was substituting a bag of mixed spinach greens instead of Romaine lettuce. The dressing is light and not-too-sweet, and the addition of the toasted almonds was awesome. Thanks for the recipe.

This is a 5 star salad you can serve to guests in a formal or casual setting and be proud. I prepared it exactly as it says I think. To clarify, I used extra virgin olive oil and distilled white vinigar. We loved the tangy dressing.

This is a wonderful addition to any meal, especially in the summer. It's light-eating, refreshing, and so tasty. A real winner for any occasion!

I really don't understand all of the rave reviews for this recipe. I really had high expectations after reading that the dressing was "TO DIE FOR" but I was very disappointed. The dressing was FAIR, AT BEST. The salad ingredients weren't all that great either. The mandarin oranges were merely mushy and barely added any flavor. Sorry!
