i like to add crumbled bacon on top before i bake it. plus a little spoonful of sour cream to serve, that makes it taste more like a "loaded baked potato"

This was very good, but the title is deceiving. It is really just mash potatoes with a hint of cheese, and does not taste at all like baked potatoes. I mixed in the cheese and put slices of American cheese on top, and the topping was nice and crusty, but you could always skip the baking as it tasted exactly the same after the 20 min in the oven.

These were pretty good. And super easy/fast to make. Tonight was one of those nights that I only half planned dinenr and needed a quick and easy side dish. We tend to prefer "real" mashed potatoes, but in a hurry, this recipe was great. I mixed the cubed cheese in and topped the potato mixture with the shredded cheese. My husband and kids ate it up! Thanks for recipe!
