INGREDIENTS
1/2 cup chopped onion
1/2 cup chopped green pepper
3 tablespoons butter or margarine
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 (8 ounce) can sliced mushrooms, drained
1 (2 ounce) jar chopped pimientos, drained
1/2 teaspoon dried basil
1 (8 ounce) package noodles, cooked
3 cups diced cooked chicken
2 cups ricotta or cottage cheese
2 cups shredded Cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup buttered bread crumbs

DIRECTIONS
In a skillet, saute onion and green pepper in butter until tender. Remove from the heat. Stir in the soup, mushrooms, pimientos and basil; set aside. In a large bowl, combine noodles, chicken and cheeses; add mushroom sauce and mix well. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 40 to 45 minutes or until bubbly. Sprinkle with crumbs. Bake 15 minutes longer.

I tried this last night as a last- minute thing and was very pleased. Everyone enjoyed it and it heated up well for lunch today. I would put this dish in the "comfort food" catagory. Tasty!!

I made this tonight for dinner, all 3 of us went back for seconds, thanks for a great recipe. We left out the green peppers because we dont like them, but it was perfect.

This is an excellent dish. Very easy to make, and it was all gone by morning somehow! :o) I made a few small changes, like frying the canned mushrooms with the onion, and adding corn. I will be making this again! Thank you.

This was amazing, sooo good. Creamy and cheesy, went back for seconds. This is definitely going to be on the menu alot. The buttered bread crumbs on top was a nice addition.

We enjoyed this, it is a heavy dish though and although we all like cheese, it seemed to be a little too much cheese. The cheddar and parmagiana came through strongly. I will make this again but might leave out the parm altogether. It was very good for a big appetite and you need nothing with it other than a salad.

This dish was very good and a snap to put together. I really enjoyed the mushrooms, which I initially thought was a lot. But the recipe seems perfect as is.

Yummy! This was a pretty easy recipe and the kids loved how cheesy it was. Even the very picky 16 month old ate some! Next time (personal preference) I would serve with a salad...it was kinda heavy on it's own.
