I didn't have bread flour, but all purpose worked great. It made a beautiful loaf, but I was very dissappointed because it was very flavorless. I would have never known it had cheese in it. If I made it again I would at least double the amount of cheeses. I was hoping to be able to taste the wonderful swiss and parmesan flavors.

A really good bread. Pay particular attention to the direction to inspect the dough after the first two minutes, and add flour or water as necessary. I used a particularly dry cottage cheese, and my dough needed quite a bit more water. Thanks! This one's a keeper!

This is a great bread! I don't like swiss cheese, so I put in some habenero chedder instead. I will make this again!
