INGREDIENTS
1 medium onion, chopped
1 tablespoon vegetable oil
3 small potatoes, peeled and cubed
2 medium carrots, sliced
3 (14.5 ounce) cans chicken broth
3 cups water
2 tablespoons parsley flakes
2 teaspoons dried basil
1 teaspoon dried oregano
1 garlic clove, minced
1/2 teaspoon pepper
1 (15.5 ounce) can great northern beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (15 ounce) can garbanzo beans, rinsed and drained
3 cups chopped fresh spinach

DIRECTIONS
In a Dutch oven, saute onion in oil. Add the next nine ingredients. Simmer, uncovered, until vegetables are tender. Add beans and spinach; heat through.

This recipe seemed so simple so I decided to try it. I was very impressed with the flavor. I would call this soup delicious!! (and low-fat) Tastes great with a little parmesan cheese on top! When I asked my three picky kids if they liked the soup, all gave the thumbs up and also thought it was delicious! Will definetly make again.

I thoroughly enjoyed this recipe. I made two small modifications. I didn't peel the potatoes and only added baby spinach when I turned off the soup. A delicious recipe, Next time I want to try this with a tomato based stock.

Yummy and tasty. I soaked dried beans overnight in the crockpot, then drained them in the a.m. before adding all the extra stuff (which I had pre-cut and put in a baggy the night before). Added the water, a big can of chicken broth, and the dried herbs and viola! Delicious bean soup with hardly any effort at all! I cooked on low in the crockpot for about 11 hours.

I thought this soup was wonderful. It was great as it was but also lends itself to so many additions. You could add almost any meat that you want, for instance. It was incredibly easy to make as well. I even made it easier on myself by using canned spinach. I will be making this soup again, even though I have enough to freeze and save.

I substituted kidney beans for garbanzos, and left the skin on the potatoes. It turned out very well. I added a little Parmesan cheese on top as someone else suggested, and that made it even better.

I make this recipe all the time, often substituting celery or additional carrots for the potatoes. As another reviewer commented, I add the spinach at the very end.
