This was allright. It is certainly not worthy of 5 stars (IMHO). Made this for my fiance and I this past week. My issue with Dana's recipe is that I felt the meatloaf itself was lacking in flavor - and I even used Hunt's garlic & basil tomato sauce, Italian seasoned bread crumbs (all I had on hand) and extra oregano sprinkled over the meat/cheese layer. My fiance actually suggested that I use pepperoni or prosciutto and omit the cheese alltogether (he felt it didn't enhance the final product enough to include it). This time, instead of ham and mozzarella, I subbed Italian salami and provolone (1/4 lb. salami and 6 medium slices of provolone per Brat's suggestion - thanks!). I also brushed my meatloaf with the remaining tomato sauce (I purchased an 8 oz. can) and topped it with aluminum foil to prevent it from drying out. I found preparation to be a breeze, which is a HUGE plus for me! I used one of my smaller cookie sheets, lined it with greased plastic wrap and then formed an 8x10 rectangle (my cookie sheet was ~ 9x12.5 inches; using it as a guide, I formed my meatloaf into a slightly smaller rectangle and then carefully rolled it up, pinching/sealing as I moved along). Served with mashed potatoes leftover from last night's dinner and frozen peas, this was a filling meal nonetheless. I am not sure that I will be making this anytime soon, but if I do, I will be sure to incorporate my fiance's suggestions! Thanks anyways DANA :)
