Tasty Thai tuna burgers with a hint of sesame, ginger, and soy. Made from minced fresh tuna steaks, these are a delicious alternative to the all-beef patty.

First the tuna is marinated in a lovely rosemary/white wine/vinaigrette. Then it 's grilled, plied to crisp salad greens with cherry tomatoes, and drizzled with a bit more of the vinaigrette.

The ingredients are classic - tuna, macaroni, mayonnaise, celery and tomatoes. But we never seem to get tired of this good old comfort food. Great for a summer meal. Dress up with slices of avocado, sunflower seeds and some cubes of feta.

Thai influenced tuna steak with a light and aromatic salad. Ideal for summer. Make sure the tuna you get is a dark ruby red and not brown or gray. (Brown shows age/oxidization, gray shows ice damage.) Tuna should be served seared and red in the middle as it is much more tender and juicy. If you do not like it this way increase the cooking time in the pan or transfer tuna to a baking tray and oven cook it at gas mark 7 for around 4 minutes.

Freshly-baked salmon is chunked in a bowl with thinly-sliced onions, tomatoes, and chopped, fresh basil. And if this isn't glorious enough, a fragrant, hot and spicy dressing is folded in. Serves six.

I love creating new variations on tuna sandwiches. This one is made with basil pesto, and served on rye bread with slices of tomato and leaves of lettuce. I made this for my husband's lunch the other day, and he wanted them again for dinner that night! 

Pasta Salad with Tuna and Broccoli

Poach a fresh piece of tuna for this satisfying salad. Toss with penne, blanched broccoli, tomatoes, mozzarella cheese, olives, walnuts, garlic and parsley. Dress with a pungent infusion of anchovy and olive oil, then serve immediately.
