Thai Shrimp Curry

INGREDIENTS
1 tablespoon vegetable oil
1/2 pound large shrimp, peeled and deveined
2 cups frozen stir-fry vegetables, thawed
4 teaspoons cornstarch
1 1/2 cups COLLEGE INN® Culinary Broth, Thai Coconut Curry
1/4 teaspoon red pepper flakes
Optional Garnishes:
Cilantro
Fresh basil

DIRECTIONS
Heat oil in large skillet. Add shrimp; stir-fry 2 minutes.
Add vegetables; stir-fry 2 minutes.
Dissolve cornstarch in broth; add red pepper flakes. Add to skillet. Cook, stirring, until thickened. Serve over noodles or rice and garnish with fresh basil and cilantro, if desired.

I made only one change which I don't think made a difference in the outcome of the taste of this dish: instead of frozen veg, I used fresh. It smelled absolutely wonderful, but when it came down to flavor, the dish was extremely bland. I have used other College Inn broths with great success, such as the wine and herb (Wonderful!!!), but I doubt I will ever utilize this flavor again.

I have never made a curry dish before. I added coconut milk and a little more curry powder along with fresh veggies such as potatoes, mushrooms, broccoli, and carrots. It was wonderful! It almost was like eating out.
