This was fresh, flavorful, and nicely crunchy. I reduced the sweetener (used 1/4 cup agave) and used pecans. It was pretty spicy, but not unbearably so. Nice and easy, too.

This is exactly what I've been looking for- It was super easy and super good. Now if I can only make two other thai dishes that come out this good I'd have a meal!

My Husband and I love Thai food. This salad tasted just like the one at our favorite Thai restaurant. The only difference was I omitted the peanuts.

This was a really nice cool side dish for an asian entree. Very light and tangy. I used English cucumbers and sliced them very, very thin which I prefer. I found that there was a lot of liquid left over after the cucumbers had been served, so I think I could have probably used another cucumber. Really good - try it.

This wasn't bad but I wasn't completely satisfied (I'd probably give it a 4.5 if that was an option). I think it might be helpful for the cucumbers to be sliced into strips in order for the flavor of the cucumber to be infused with the strong cilantro-vinegar dressing. Also, it's crucial to use fresh jalapenos - the canned ones just won't cut it. We actually ate this with turkey tacos and they were good!

Wow...this was really refreshing and tasty. I forgot the jalapenos so I added some chili powder to the dressing. Will def do again using the jalapenos

I recently helped my date make this salad for dinner and it turned out amazing. The salad is very easy to make and the flavors are very refreshing. If you’re looking for a simple salad give this one a try and you won’t be disappointed.
