This is sooooo yummy! After being raised on traditional southern-style pintos, the southwestern additions are a delicious change. And I love that there's no pork required...this recipe is very healthy, but in NO WAY lacking in flavor or richness. With a pot of collards, a side of cornbread and a pitcher of sweet tea, the longing for a trip to my southern-belle Grandma's kitchen is satisfied! I've made these on the stove as well as in a slow-cooker, and both ways are great. I like to add a little garlic salt at the end, too. I read that adding the salt while cooking will result in tougher beans, so I'm always careful to add it after they are fully cooked and have reached the texture I'm looking for. And either green or red salsa works. I always double this recipe and my hubby gladly eats the leftovers for days! Thanks for a wonderful recipe, Fooddude!
