I had high expectations for these beans after reading the reviews but I was slightly disappointed. I replaced some of the chicken stock with beer and that added a nice bitter-sweetness. But I also had to add a can of tomato paste, extra garlic, paprika, chile powder and extra cumin, salt and pepper. I definitely should have soaked the beans overnight because I cooked them for 4 hours and they were still a bit firm. I had to keep adding water to prevent them from drying out and I think that just diluted the spices too much and made it bland. I also threw in about 1/4 cup of brown sugar to add more richness. I think if I make this recipe again I would use chicken stock instead of water during the cooking process or just put everything into the slow-cooker and set it on low for about 8 hours. It was a bit of a pain to keep going back to the stove to add water,stir and taste the beans. I will give this one another try, maybe add a can of diced tomatoes and will definitely use the slow cooker!
