Ingredients

  • 1 head romaine lettuce, chopped
  • 4 green onions, sliced
  • 2 roma (plum) tomatoes, chopped
  • 1 avocado - peeled, pitted, and diced
  • 1 tablespoon fresh lime juice
  • 1/4 cup apple cider vinegar
  • 2 tablespoons tequila
  • 1 tablespoon chilled lime juice
  • salt and ground black pepper to taste
  • 1/4 cup extra-virgin olive oil

Directions

  1. Place the lettuce, onions, tomato, avocado, and 1 tablespoon lime juice in a large bowl; toss to coat.
  2. Whisk together the vinegar, tequila, 1 tablespoon lime juice, salt, and pepper in a small bowl; slowly stream in the olive oil while whisking; pour the mixture over the salad and toss to coat. Serve immediately.
