Tender Flank Steak

"'This mildly marinated flank steak is my son's favorite,' reports Gayle Bucknam of Greenbank, Washington. 'I usually slice it thinly and serve it with twice-baked potatoes and a green salad to round out the meal. Leftovers are great for French dip sandwiches.'"

INGREDIENTS
1/4 cup soy sauce
2 tablespoons water
3 cloves garlic, thinly sliced
1 tablespoon brown sugar
1 tablespoon vegetable oil
1/2 teaspoon ground ginger
1/2 teaspoon pepper
1 (1 pound) flank steak

DIRECTIONS
In a large resealable plastic bag or shallow glass container, combine the first seven ingredients; mix well. Add steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Drain and discard marinade. Grill, covered, over medium-hot heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F).

Nutritional Analysis: One serving (prepared with light soy sauce) equals 209 calories, 326 mg sodium, 59 mg cholesterol, 3 gm carbohydrate, 24 gm protein, 11 gm fat, trace fiber. Diabetic Exchange: 3-1/2 lean meat.

The flavor was excellent. I didn't have exactly 1/4 c. of regular soy sauce so I used regular and Lite and added a little more water to make a 1/4. I also used "already prepared" garlic in a jar. I didn't have the time to marinate for as long as the recipe said so I marinated approx. 1 hour and didn't throw out the remaining marination but cooked the steak on the stove in it. I will try this with other kinds of meat. My family really enjoyed this. Thanks.

This was the best recipe for flank steak I've found yet! I added a little red pepper and a couple drops of sesame seed oil and marinated it for about 6 hours. Then I pan fried it in some of the marinade. It was so tender and delicious! I served it with garlic mashed potatoes and brocolli and my boyfriend was singing my praises. Thanks!!

I must say, this did taste pretty good! If the soy sauce is too strong for your liking, try using a can of soda such as Dr. Pepper or root beer. It still adds a lot of flavor and tenderness without the bitterness of soy sauce. Also, be sure to poke the steak all over with a fork before adding to the bag of marinade to ensure that the steak will soak in all of the flavors.

I thought that the soy sauce was too overpowering. I marinated for only 1 1/2 hours and then pan fried it without adding the marinade and still all I could taste was salty soy sauce. Perhaps on the grill it would be different. If I make this again I will use light soy sauce and will use half the soy and replace the lost liquid with a mixture of water and balsamic vinegar, and will up the olive oil some. Definately not a good marinade for pan frying the way it is now.

This recipe was very flavorful! My husband and my 3 year old son loved it. I will serve this again!! I ate mine over a bed of lettuce and a little blue cheese dressing.

This recipe was great! We marinated the steak overnight and it was extremely tender and flavorful once cooked. We enjoyed this recipe so much that I will be serving this dish when it is our turn to host dinner club again!
