1/2 cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1 egg white
1 pound boneless skinless chicken breasts, cut into 1-inch cubes

DIRECTIONS
In a large resealable plastic bag, combine the bread crumbs and Parmesan cheese. In a shallow bowl, beat the egg white. Dip chicken pieces in egg white, then place in bag and shake to coat. Place in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake, uncovered, at 400 degrees F for 12-15 minutes or until chicken is no longer pink, turning once.

Nutritional Analysis: One serving (6 nuggets) equals 194 calories, 3 g fat (1 g saturated fat), 68 mg cholesterol, 250 mg sodium, 10 g carbohydrate, trace fiber, 30 g protein. Diabetic Exchanges: 3 lean meat, 1/2 starch.

This is a very simple dish to make. I made it exactly the way stated but I didn't care for the texture of the nuggets coming out of the oven. There wasn't any crunch to them. I served them from the oven to my young granddaughter but for myself and rest of family I heated up a tiny bit of oil in frying pan and just crisped them up a bit. Dipped them in bbq, ranch and honey mustard dressing. Will make these again. ty

We all loved these! mine turned out crispy, i sprayed them with a little cook spray on top right before putting them in the oven. this is so easy and really good. give it a try. i would say to make sure you dry off the chicken tenders (i used these) or breast with paper towles, this may be why some of the reviews say the texture was off. just dry off your chicken before coating it with the egg. bama girl

Family really enjoyed these, in various dipping sauces (barbeque, ranch, ketchup.) Will make again. My husband and I took the leftovers for lunch the next day and cut up the chicken on lettuce salads.

I love this type of recipe -- just three ingredients and great! Only change I made was using the whole egg, rather than separating the white! Came out delicious and very dippable!

These were good but pretty basic. I added garlic powder to add a bit of flavor. Also increased the heat and added a bit of time to crisp them up. I sprayed the tops with cooking spray as well. As I said, these were good but basic!

a good, easy recipe. I think the temp needs to be a bit higher and they need to be cooked a bit longer--they weren't crispy enough for my taste the way it's written.

I thought these were wonderful! I used Italian bread crumbs and just eyeballed the amounts for the crumbs and the cheese. I also baked a bit longer, 20-25 minutes as some of the nuggets were thicker than others. Served with lite ranch dressing.

This is a very good and healthy recipe. I did use a whole egg rather than just the egg white. I also added from my garden some fresh tarragon and italian parsley which I felt gave it more flavor. Do bake them for 20-25 minutes as other users have suggested, they still turn out tender and juicy! Will make this again and again.
