Barbeque Tempeh Sandwiches

I hate tofu but love tempeh and this sandwich is tangy and tasty. My boyfriend and I eat this all the time. It's great because it's vegan for him and I still like it (even though I'm not a vegetarian).

Tempeh is sauteed with soy sauce, lime juice and lots of veggies including green bell peppers and spinach. Chopped green chile peppers and cilantro add a fresh kick. Serve with tortillas, refried beans and rice.

Slices of tofu and onion are cooked in vegetable oil until golden. Barbeque sauce is poured in the pan and everything simmers away for about ten minutes. Serve on warmed buns.

Roasted eggplant in a French roll with feta cheese, basil and garlic mayonnaise. This was my favorite sandwich of all time, adapted from a cafe at the University of California, Irvine. 

Fried Tempeh in Batter

Thick slices of tempeh are dipped in a flour and egg batter flavored with green onion, coriander and ginger and then deep fried until glistening and golden. Makes great appetizer. 

Mediterranean Made Rights (Loose Meat Sandwiches)

Where I live loose meat sandwiches are know as made rights, this is a Mediterranean take on this favorite. You can use tzatziki sauce (cucumber/yogurt sauce used on Gyros) in place of the feta sauce to give it a more gyro kind of touch. 

Bacon, Asparagus, and Cheese Sandwiches

When I was a kid my sister and I LOVED when my mom made these broiled asparagus, bacon, and cheese sandwiches. We would always argue about the order the ingredients should go on the toast. (Of course, I'm submitting this in the order I liked.) It was also a good way to get us to eat asparagus.
