Pita bread stuffed with sauteed onion, green pepper, tempeh, and Swiss cheese. This is an excellent way to eat tempeh!

I hate tofu but love tempeh and this sandwich is tangy and tasty. My boyfriend and I eat this all the time. It's great because it's vegan for him and I still like it (even though I'm not a vegetarian). 

Veggie Fajitas

My family loves these peppery veggie fajitas! Serve the fajitas with flour tortillas, cheddar cheese, lettuce, tomatoes, sour cream, and I even put steamed broccoli on the side (so each can add broccoli if wanted). 

Vegan Fajitas

Zucchini, yellow squash, bell peppers and onion are marinated and then sauteed. Serve with tortillas or rice, if desired.

Eat your veggies! No problem doing that with these fabulous fajitas. Summer squash, red and green peppers and strips of red onion are sauteed with oil and garlic and then wrapped into a warm tortilla. A sprinkling of cheese and cilantro and your on your way.
