Tasty Shepherd's Pie with Mashed Cauliflower and Ground Turkey

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover and steam until tender, 10 to 12 minutes.
  3. Heat olive oil in a skillet over medium heat; cook and stir garlic until softened, about 2 minutes.
  4. Blend cauliflower, garlic, Parmesan cheese, cream cheese, salt, and pepper in a blender until smooth.
  5. Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir water, macaroni, peas, and soup mix into turkey; simmer until pasta is tender yet firm to the bite, 5 to 10 minutes.
  6. Pour pasta mixture into a 9x13-inch baking dish. Spread cauliflower mixture over pasta mixture. Sprinkle paprika over the top.
  7. Bake in the preheated oven until lightly browned, about 20 minutes.

  • Cook's Note:
  • This can be made ahead and baked at a later time. Just adjust the bake time to 35 minutes if coming out of refrigerator.
  • A great side vegetable is whole kernel corn. It is awesome piled on top or added to the pie!

The recipe was a little hard to follow in my opinion. I loved using cauliflower as mashed potatoes for the first time but other than that.. not very impressed.

I made this recipe for the first time and it turned out beautifully. I didn't have any frozen peas so I substituted with a can of corn. A friend of mine doesn't like cooked cauliflower but really enjoyed the new twist on an old favorite. I will definitely make it again.

I had issues with this recipe. There was not enough liquid in the cauliflower mixture to blend in my blender, so I had to empty it and blend in two batches in a smaller chopper that I have. Lots of blender parts and bowls to wash after that! Perhaps it should have specified a food processor. I don't know if I had a small head of cauliflower or what, but there was barely enough to cover the turkey mixture - just a thin, skimpy layer. The turkey mixture also needed more liquid - turned out very dry after baking. I wondered if the cauliflower couldn't have been cooked in the microwave -- much simpler! Altogether, a frustrating experience.

I used this recipe and made a few ingredient adjustments, it came out perfect. It was so yummy and everyone loved it. I would certainly make this again with the cauliflower as a healthy alternative.
