Tarragon Vegetables

INGREDIENTS
1/4 cup olive oil
2 tablespoons tarragon vinegar
1 clove garlic, crushed
1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
2 large yellow squash
1 large zucchini
1 large green bell pepper
1 large yellow bell pepper
1 large red bell pepper
3/4 pound medium-size fresh mushrooms

DIRECTIONS
WHISK together first 6 ingredients in a large bowl.
CUT yellow squash and zucchini into 3/4 inch slices and bell peppers into 1-inch squares. Add squash, zucchini, bell peppers, and mushrooms to oil mixture. Let stand 1 hour, tossing occasionally.
DRAIN vegetables, discarding marinade, and thread alternately onto skewers.
GRILL, covered with grill lid, over medium-hot coals (350 to 400 degrees) 5 to 7 minutes on each side or until tender.

These were okay, but not really worth the effort. I made the marinade and marinated them overnight, and they still didn't have very much flavor.

very good and simple recipe. i don't know if i should be posting my rating here since we were out of Taragon and had to replace that ingredient with Balsamic Vinagrette but it did real well considering and my veggie friends all loved these skewered items.
