Tarragon Vegetables

"Kabobs are so easy- - just cut, skewer, and grill. Though they are perfect for grilling, these kabobs also broil well on bad-weather days."

INGREDIENTS

  • 1/4 cup olive oil
  • 2 tablespoons tarragon vinegar
  • 1 clove garlic, crushed
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large yellow squash
  • 1 large zucchini
  • 1 large green bell pepper
  • 1 large yellow bell pepper
  • 1 large red bell pepper
  • 3/4 pound medium-size fresh mushrooms

DIRECTIONS

  1. WHISK together first 6 ingredients in a large bowl.
  2. CUT yellow squash and zucchini into 3/4 inch slices and bell peppers into 1-inch squares. Add squash, zucchini, bell peppers, and mushrooms to oil mixture. Let stand 1 hour, tossing occasionally.
  3. DRAIN vegetables, discarding marinade, and thread alternately onto skewers.
  4. GRILL, covered with grill lid, over medium-hot coals (350 to 400 degrees) 5 to 7 minutes on each side or until tender.
