4 cups uncooked bow tie pasta
2 cups cubed cooked turkey breast
3/4 cup sliced celery
1 (11 ounce) can mandarin oranges, drained
1/2 cup reduced-fat mayonnaise
1 tablespoon orange juice
1 tablespoon Dijon mustard
2 teaspoons minced fresh tarragon
1 teaspoon grated orange peel
3/4 teaspoon salt
1/8 teaspoon white pepper

DIRECTIONS
Cook pasta according to package directions; rinse with cold water and drain. Place in a large bowl; add turkey, celery and oranges. In a small bowl, combine the mayonnaise, orange juice, mustard, tarragon, orange peel, salt and pepper. Pour over pasta mixture and toss to coat. Cover and refrigerate for 1 hour. Serve over lettuce.

Nutritional Analysis: One serving (1 cup) equals 234 calories, 6 g fat (1 g saturated fat), 41 mg cholesterol, 421 mg sodium, 27 g carbohydrate, 1 g fiber, 17 g protein. Diabetic Exchanges: 2 starch, 2 lean meat.

Very good salad but I made a few changes to add a little more flavor. First I used a teaspoon of dried tarragon since I did not have fresh. I added about 1/4 cup prepared Italian dressing to the mayonnaise mixture, added about 1/3 cup dried cranberries and sprinkled chopped pecans on top of individual servings.

This is a very nice summer salad, though I think it lacks either "kick" or crunch. The missing component would have to be subtle, so as not to over-power the delicate flavors of this mixture. I might have added toasted, slivered almonds, a sprinkling of chow mein noodles (or similar), or maybe blood orange instead of Mandarin.
