A mixture of celery, onion and green pepper adds a spark to this simple green bean side dish from Ruby Williams, Bogalusa, Louisiana. It's pleasantly seasoned with dried tarragon and lemon-pepper, so its flavor complements most main-dish meats.

Just like the name of the dish implies, this recipe makes a lovely side dish of green beans, kalamata olives, and tomatoes. These items are tossed with red wine vinegar, garlic, and oregano before being finished with a sprinkling of feta cheese. Allow the flavors to marinate together overnight for even better results.

A salty-sweet side dish sure to please veggie-lovers and sweet-tooths alike! You can normally find a good-sized bag of fresh green beans at a fruit stand or farmer's market for about a dollar.
