4 cups fresh broccoli florets
1/4 cup water
1/4 cup chopped onion
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1/4 cup reduced-fat sour cream
1/2 teaspoon dried tarragon

DIRECTIONS
In a microwave-safe bowl, combine the broccoli, water, onion, salt and pepper. Cover and microwave on high for 3 minutes. Stir; microwave 1 minute longer or until broccoli is almost tender.
Drain; stir in butter until melted. Combine sour cream and tarragon; stir into broccoli. Cover and let stand for 5 minutes.

This recipe was tested in a 1,100-watt microwave.
Nutritional Analysis: 3/4 cup equals 69 calories, 5 g fat (3 g saturated fat), 14 mg cholesterol, 201 mg sodium, 5 g carbohydrate, 2 g fiber, 3 g protein. Diabetic Exchanges: 1 vegetable, 1 fat.

I made this recipe tonight and my husband and I enjoyed it ~ so much that there are no leftovers! I'm the world's worst at measuring so I made the following changes because I didn't measure the broccoli ~ I added more sour cream (approximately another 1/4 cup) and shredded marble cheese. I'm out of tarragon so I had to omit it. I will make this again.

Edible, but we didn't care for it at all. Was a waste of a whole bag of broccoli florets, unless you want to smother them with cheese sauce, which defeats the low cal purpose then doesn't it?
