The finished product could have been spicier and even used more blue cheese. Next time, we will add more jalapenos, maybe even some crushed red pepper, I will use whole eggs to bind them better than just egg whites, add a little more soy or salt, and add more blue cheese. All in all, a quick and easy meaball recipe that we will be serving up at the Super Bowl party this weekend!

Love these! I leave out the olive oil and add extra blue cheese and chili powder, super spicy yummy!!

I've been a member of AR for years. It's my go-to source for recipes. Not often have I felt compelled to rate a recipe, but this one is *ridiculously* GOOD. Read the helpful hints from others. My only modifications were a little more bread crumbs, the mixture was pretty wet. (I added about 1/4 cup.) And less pepper. I used 1 TEASPOON, not tablespoon. Be sure to spray your foil with cooking spray. That's it. These. Are. Awesome. And easy. I'll make these from now on!

Love this recipe, it's a favorite at home and parties!!! I used (2) serrano peppers instead of jalapenos because the store was out and they were a great substitution, and only use 1/2 tbs of black pepper. ****Tip..use parchment paper instead of foil and you won't have problems with them sticking:) Enjoy!

LOVE LOVE LOVE these... they are good alone with marinara sauce to dip... they are also good in a pasta dish with butter and parmesan... note... they are spicy, so the hotter the pepper you use, the spicier the meatball. I made these in my ski house with a few other couples and everyone was very impressed with the combo of ingredients.

Wasn't too thrilled with these. The texture was like meatloaf which my hubs doesn't care for but at least it wasn't dry. It also need some salt.

I have been trying to find the perfect slightly spicy meatball and I think this it. I did substitute Laughing Cow Blue Cheese spread for the blue cheese and I think that gave it the perfect consistency. It's also lower in calories! I also used fresh parsley since I had it on hand. I think you could probably use any of the flavored Laughing Cow and it would be great.
