I thought this recipe was a great cool snack! I chose to use light olive oil, 2 cloves of garlic (I Love Garlic!) And I cut some cherry tomatoes and added. For me, using the light olive oil my result was not greast at all! Very delicious and I highly recommend!

Followed the recipe exactly, but these were far from tangy; the cheese cubes just tasted oily even though I marinated overnight and added extra pepper and a little more vinagar. Maybe a different kind of cheese would be better?
