We really liked this neat new way to eat taco meat, especially me. (I'm eating low carb and I can't eat tortillas or taco shells.) I used red bell peppers and I didn't measure out my onion, I used half of one large sweet onion. I also made my own taco seasoning. This turned out really well. Next time, I would double the recipe to have extra for my husband so he could have two (one wasn't near enough to feed him) and leftovers for the next day's lunch as well. My family gave me the thumbs up--I will definitely make this again.

I used 1 lb of ground beef, an entire taco seasoning packet, and added a cup of frozen corn. This fit well into 3 peppers, cut in half, making for great leftovers!

Good flavors, but boiling the peppers first is too fussy. Just stuff the raw peppers and bake in a covered dish for 30-40 minutes.

Good! Used red and green peppers. Also used ground turkey...a can of diced tomatoes and green cilies, another small can of diced green chilies, and some frozen white corn. Tasty. Nice change for ground turkey. Thanks!

Instead of beef, I used one pounds of ground chicken cooked with onions. This filled three peppers, one red, one yellow, one orange. I mixed half a package of liption spanish rice into the chicken, and added a little mexican cheese blend. My husband cut his pepper in half and placed in on a plate lines with lettuce. Adding tomatoes, sour cream, and some crumbled tortilla chips, it made a nice salad for him. I ate mine the traditional way. It was perfect!

We really liked these. However, the meat was a little bland for my taste. Next time, I would spice it up a bit with some more taco seasoning and maybe some more onions. Other than that, it's a great idea and I will definitely do it again!
