1/2 pound lean ground beef
1/4 cup chopped onion
1 1/2 cups water
1 (16 ounce) can chopped stewed tomatoes, with juice
1 (15 ounce) can kidney beans with liquid
1 (8 ounce) can tomato sauce
2 tablespoons taco seasoning mix
1 avocado - peeled, pitted and diced
1 cup shredded Cheddar cheese (optional)
1 (12 ounce) package corn tortilla chips (optional)
1 (8 ounce) container sour cream (optional)

DIRECTIONS
In a large saucepan over medium heat, cook ground beef and onion until meat is evenly brown; drain excess fat. Mix in water, tomatoes, kidney beans, tomato sauce, and taco seasoning mix. Cover, and simmer for 15 minutes. Remove from heat, and stir in the avocado.
Ladle hot soup into serving bowls. Pass cheese, tortilla chips, and sour cream to top each serving.

I liked this recipe because it was easy to throw together and had a good flavor. We like a more hearty soup, so we upped the ground beef to a pound and added a can of whole kernel corn. Also added an entire packet of mild taco seasoning. We'd definitely make this one again. It's great with crushed tortilla chips and melted Monterrey/Cheddar on top. A great recipe that you can customize to your own taste. We added some fresh cilantro as another review recommended - definitely will do that again.

Loved this quick and easy recipe as is... the second time I prepared it I added a packet of ranch dressing mix for a tangy kick and I omit the avocados only for my boyfriend... oh and we love it with fritos!!! Make extra because it's even better the next day!!

Anytime I can serve a dinner that my whole family likes, I call it GREAT! "Taco soup" is fun (chips), flavorful, and very fast and easy to prepare. I did leave the onions out to suit my husband, though!

This is a wonderful recipe for a cold day. Really warms you up, tastes fabulous, is quick and easy, and is made from normal, everyday, pantry items. How great is that?

My husband and I both LOVE this recipe! We were going to have it on a camping trip, but decided to stay home. The two of us at all of the Taco Soup by ourselves... GLADLY! Our only regret was that our stomachs couldn't comfortably hold as much as we wanted to eat. Very very good recipe. A definite keeper!!

I'm giving this a three not because I didn't like it it was great for a day when I was pressed on time and energy, but it was really lacking in taste even after I added almost a whole package of taco seasoning (which didn't seem to do much but increase the saltiness). Overall I would make it again with some adjustments but won't be a recipe we'll eat often.

Absolutely delicious! I don't like it real soupy, so I drained the beans and used a 1/4 less water. The avocado really pulls it together! I sprinkled chopped green onions on the top as well.
