I made this with one can of Italian seasoned diced tomatoes and mozzarella instead! I also put a can of beans in and less ground beef. (that would have been better with the taco flavor. Anyway, we all liked it. My daughter made peas to go with it. To make it faster I baked the potatoes in the microwave...but don't over cook...mine were a little mushy.

So AWESOME!! A new favorite in our family for sure. It gave the kind of getting boring taco or burrito dinners a whole new twist. The potato had a yummy crunch from the baking prior to the filling and I was surprised how well the potato just gave taco meat a whole new life. I thought it was really simple to prepare and did not take me long at all, especially when I just threw together a salad and the whole meal was done in no time. The 2nd go around I added some corn and black beans for more nutrients and everyone still loved it! Thanks for the great recipe :)

These were kinda time consuming but AMAZING! I used turkey burger instead to lower fat and also used olive oil with garlic salt to coat the shells. I made my own taco seasoning and used tomato's with green chili's as well. It was a total hit with the hubs! great invention and it gave me an idea of other things to fill the shells with! oh and I made it with black bean pasta salad from this site...they went very well together:)

This is a great recipe! The only thing that I changed was I used ground turkey and a cheesy taco seasoning. I also put the meat in the shells and melted the cheese on top but set aside tomatoes, sour cream, green onions and black olives. This way its was more like a taco bar so everyone could dress them for thier own taste! Thanks so much for the great and very filling spin on taco night!

Despite all the work to do these it is well worth it. Absolutely delicious and two thumbs up from hubby. I followed others suggestions and baked the potato the previous day.

This has long since been a family favorite of ours. It's great on Monday ... bake and cut the potato on Sunday. I make this with green beans and serve with Salsa.

Both DH and I loved this one. My picky son even ate it. It reheated great. I also added corn to the filling and chopped green chiles. I will be making these again. It's well worth all the work.
