Recipe by Tonia
"This fresh, delicious, and healthy dish is loved by everyone at first bite. It is made with forbidden rice, which has been eaten in China for centuries. It's full of fiber, vitamins, antioxidants, and flavor. It somehow manages to give one a sense of well-being, peace, and energy at the same time. It is filling without leaving you with a feeling of being stuffed. Delicious! Serve slightly warm or at room temperature."

2 (15 ounce) packages
black rice (such as Lotus® forbidden rice)
1 1/2 cups
tamari (gluten-free soy sauce)
mirin (Japanese sweet wine)
Sriracha hot chile sauce, or to taste
roasted unsalted cashews
red bell pepper, diced
yellow bell pepper, diced
orange bell pepper, diced
thinly sliced scallions
chopped Thai basil
chopped purple basil
jalapeno pepper, minced
I should've added that when if you don't have Thai or purple basils, you can use sweet basil. Although Thai basil can be found at an Asian market, I grow both Thai and purple in my garden. It's a fantastic salad either way! I buy the rice by the case on Amazon. It's not as expensive that way either. Enjoy!
