I was impressed that such a simple recipe could be so tasty! I've never been a fan of the texture of boiled potatoes, but these are completely different. They are super creamy inside without being mushy. The salt crust on the outside gives the impression that they will be overly salty, but they weren't at all. In fact, they were perfectly salted. I thought I had made far too many for the number of people I was serving, but everyone kept going back for more. I got rave reviews and requests to make them again from everyone. We had them with steak, but I think they would be perfect with almost anything.
