This turned out perfectly! My fiance always raves about his American-raised stepmum's meatloaf, so I figured I'd look up some recipes. I tried this one as I liked the idea of cheese and crackers inside the loaf and Simon loves bacon. I used two slices of bacon rather than one, and had to use sliced Swiss chesse and break it up as shredded Swiss cheese doesn't seem to exist in Scottish supermarkets. I completely forgot to buy any sage and substituted some thyme instead and that worked fine. Overall, a great success even with the substitutions. Simon has already requested that I make it again :) We ate it with roast potatoes (cooked with more thyme) and a nice green salad.
EDIT: We've recently cooked this again with sage and it works just as well!
