I don't have a panini maker, but my waffle maker has a sandwich maker attachment that I'd never used before. I figured this recipe was perfect to try the sandwich maker out on. The dough yielded 4 sandwiches (as opposed to 3 paninis). I couldn't fit anywhere close to all ingredients into the pans, so I had to adjust down and eyeball quantities to what fit. The sandwiches are really good. My husband thinks a little fig jam would make them 5 stars. We'll try that next time. Oh, and i want to mention the egg. I was not sure if I was supposed to put egg on both sides or just one, so I did both. The egg made a lovely golden, crispy coating on the dough. On the inside, it was like a thin layer of scrambled eggs, which you couldn't taste at all. I guess I was supposed to only put the egg on the outside.
